Ingredient

1 pouch saan choy
500g potatoes, unpeeled, chopped
150g red onion, peeled, chopped
150g apple, unpeeled, chopped
100g dried green lentils
50g ground almond
2l veggie stock
100ml coconut cream
Salt and pepper to taste
Olive oil for browning

Direction

Brown potatoes, onion, and apple in olive oil for 5 minutes
Add lentils and 1 liter of veggie stock
Bring to boil, reduce heat and simmer for 15 minutes
Blend smooth in the pan with a stick blender (or run through a food processor and return to pan)
Add saan choy, almond and rest of veggie stock
Bring back to boil, reduce heat and simmer a further 10 minutes
Add coconut cream and salt and pepper to taste
