Snake beans, sometimes called yard-long beans, are long and slender green pods that can grow up to 50cm long. They are used commonly in traditional Asian and Indian cuisines. Snake beans are great when sautéed under a high heat so that their crunchy texture is retained. Serve as a side vegetable sprinkled with chopped nuts or fresh herbs. Cold, raw or blanched beans can be used in salads or used as a crudite with a dipping sauce.
