Snow Needle Mushrooms, also known as Enoki mushrooms, have long, slender stems and tiny white caps. Snow Needle Mushrooms work particularly well in noodle soups and stir-fries, and are also delicious when tossed raw into a salad or as a pickle. They are very popular in Japan and are widely used in other Asian cuisines as well. When preparing, ensure that the woody and brown ends are trimmed off before washing throughly.
