Long Eggplant

Long eggplants are usually lighter, more lavender-purple, and longer than regular eggplants. It has a nice, thin skin, doesn't contain many seeds, and flesh that’s extra creamy when cooked. They can be used as a substitute for a regular eggplant, but they are particularly great when grilled or in a stir-fry.
